Flourless Beet Brownie Bites

Beets are an overlooked and underrated vegetable but their natural sweetness makes them great for treats with the added benefit of extra nutrients like iron, vitamin C, potassium and fiber. 



Every kid wants to run as fast as a cheetah and the inorganic nitrates found in beets are converted to nitric oxide in the body which keeps blood vessels healthy and oxygen flowing. So beets, with an assist from light up shoes, will have you kids running faster than ever.


1 cup cooked beets (2-3 beets)

½ cup almond butter

½ cup cacao powder

1/8 cup maple syrup

2 eggs

½ tsp vanilla

½ tsp baking powder

1 tsp cinnamon

½ cup chocolate chips


  • Preheat oven to 350 degrees and grease a mini muffin tin

  • Trim beet stems and place beets in boiling water for 30min or until fork tender. Remove and peel once cooled. If you have precooked beets you can skip this step

  • Combine beets, almond butter, cacao powder, and maple syrup in a blender and blend until incorporated. You may need to scrape down the sides to get everything mixed together

  • Add eggs and vanilla to beet mixture and blend until just combined

  • Ina separate bowl combine baking powder and cinnamon

  • Pour beet mixture into a large bowl and add cinnamon mixture stirring well

  • Coarsely chop chocolate chips and stir into batter

  • Spoon batter into prepared muffin tin and bake for 15-20 minutes or until inserted toothpick comes out clean

  • Recipe makes about 36 mini brownie bites
